Washed processing

Washed processing is when the berries are depulped approximately 8–12 hours after harvest and soaked in fermentation tanks overnight. Microorganisms then trigger fermentation, dissolving any pulp and mucilage left behind. The washed method ensures a clean, vibrant flavor profile while minimizing defects, such as hollow beans or over-fermentation.

Water 92-93°C

The water should be clear and completely odorless. The ideal range for total dissolved solids (TDS) is between 50 and 175 mg/L.
