When we say 'Funky,' we’re talking about those bold, intensely fruity, and winey notes—sometimes even with a 'boozy' kick. These unique flavors emerge from experimental processing techniques where fermentation is both intentional and meticulously controlled.

Water 92-93°C

The water should be clear and completely odorless. The ideal range for total dissolved solids (TDS) is between 50 and 175 mg/L.
